Creamy Garlic Salad Dressing

Stir together:
1 ½ Tbsps. sesame tahini
1 – 2 cloves of garlic, minced
1 1/2 Tbsps. fresh lemon juice
2 – 4 Tbsps. water
2 – 3 tsps. toastsed seasame oil
1/8 tsp. freshly ground black pepper
2 – 3 tsps. agave, rice or maple syrup for a bit of sweet

Add to Wild Rice and Nettle Salad (link).

*Nettles are one of the most powerful iron sources in the vegetable kingdom. Great for anemia and as a general blood tonic, eczema and other skin conditions. Collect early in spring and wear long sleeves and gloves for protection. Use leaves up to 3” wide.Wash and blanch 30 seconds to remove the sting. Chop and use like spinach.
